鼠李糖乳杆菌为革兰阳性厌氧菌，无质粒；不能利用乳糖，但可代谢单糖；在厌氧情况下能很好生长，在有COz存在的情况下也能生长。LGG可溶性蛋白的电泳模式和干酪乳杆菌鼠李糖亚种相似，但它不同于那些不发酵乳糖、麦芽糖或蔗糖的亚种。LGG产生少量醋酸和大量乳酸，抗生素敏感性测试表明LGG对青霉素、氯林可霉素、红霉素、万古霉素、四环素和氯霉素敏感，而对灭滴灵有抗性。LGG在LBS番茄汁琼脂和MRS琼脂培养基中生长呈现特定的形态学特征，这使其易于辨认，在这两种培养基中LGG呈大的、奶油白色、不透明菌落，且散发奶油味。
